Beetroot burgers?! Yes, that was my reaction too when, a little while ago, when out to dinner, the 'Unbeetable Burger' caught my eye. It was on the menu in a hip, street-food pub and if I'm honest, I didn't quite know what it was. Was it just a good beef burger? Had the place made a typo on their trendy, wooden menu that would've been too costly to rectify? Being the ex-school teacher that I am, I just had to ask.
"No, no, they're our special beef and beetroot burgers with a horseradish sauce", the waitress told me. Beetroot burger? I was intrigued, so I ordered it. And, wow, it was incredible. It was full of flavour, rich and earthy. It had a moistness that I had never known possible in a burger! And it had this intense colour, which made it not only satisfying to eat, but good to look at.
This got me thinking. What would this burger taste like without the beef? Would the colour be so intense? Would the burger still be so juicy? So, I experimented. Five beetroots later and one very messy kitchen, I had these BBQ Beetroot Burgers. I think they give that 'Unbeetable Burger' a run for its money.
BBQ Beetroot Burgers

Ingredients
- Small Onion
- 2 Cloves Of Garlic
- 150 grams Cooked Beetroot
- 150 grams Cooked Quinoa
- 150 grams Breadcrumbs
- 3 tbsps BBQ Sauce
- 1 tbsp Coconut Oil
- A pinch of Salt and Pepper
Instructions
Dice the onion and fry in a pan with a little bit of coconut oil. Stir until they are golden.
Roughly chop the garlic and add to the pan. Briefly, fry along with the onion until they are just beginning to charr.
Allow the onion and garlic to cool slightly, but leave the pan on ready to fry the burgers in a minute!
Once cooler, tip the onion and garlic into a blender with the rest of the ingredients. Blend the beetroot, quinoa, breadcrumbs, onion, garlic, BBQ sauce together in short pulses. Once the mixture starts to resemble meat, stop blending! It’s important not to over blend here or you will lose the texture.
Roll up your sleeves, and use your hands to shape the mixture from the blender into patties.
Add a little more coconut oil and fry the patties in the pan for around 10 minutes. Don’t forget to flip halfway!
